Chocolate Chip Oatmeal Cookies

I think I've hit an epic level of laziness - you know those days when you know exactly how much work you have to do but you can't force yourself to do it? And then you sit around feeling worthless?

Well that's when I thought of cookies.



Checked my fridge/pantry and I have enough random ingredients lying around for this to be a success, so here we go!



Ingredients (for 24 cookies):
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar (personally I don't like that much sugar so I cut it down by a few tbsps)
  • 1 egg
  • 1/2 tbsp vanilla
  • 3/4 cup + 2 tbsp flour
  • 1/3 cup oats (instant or rolled oats)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup chocolate chips
  • 1/4 cup walnuts, pecans, white chocolate chips, or etc.
Beat your butter, brown sugar, and vanilla sugar in one bowl until nice a fluffy, about 2 minutes. Beat in your eggs one at a time, then follow with the vanilla.

In a separate bowl, mix flour, baking soda, and salt. Mix that in with your butter mixture. 

Stir in your chocolate chips and whatever else you fancy.

Line your cookie sheet with parchment paper or grease it with butter. To make your life infinitely easier, wet your hands first. Take a small handful of the cookie dough (about 1 tablespoon), roll it into a ball, and put it on your cookie sheet.


Set all your balls of cookie dough about 2 inches apart and flatten each with a fork (or hand) so they're about 1 cm thick. 

Bake them in a 375 F oven for 8-9 minutes and you're done! Let them cool for about 10-20 minutes.

I never claimed to be a very clean baker!
Reverse Chocolate Chip Cookies: You can play around with chocolate chip cookies by subbing 3 tbsps of cocoa powder for 3 tbsps of flour and throw in white chocolate chips instead of semisweet chocolate chips. 

White Chocolate Macadamia Nut: Sub the chocolate chips and other with white chocolate chunks and macadamia nuts roughly chopped. You can take out the oatmeal by just adding 1/3 cup of flour instead.

Spiced Oatmeal Raisin Cookies (my personal favourite): Sub out 1/4 cup of the flour for another 1/4 cup of oats, add a pinch of cinnamon and ground nutmeg, and sub in raisins instead of chocolate chips. Or do half of both! 

Extra tip: make sure your batter is quite doughy (as in it's not too watery/sticky) or else it'll melt down and burn while baking.
